Heart and cardiovascular help have been found to reduce risk of cognitive decline as we age. But finding heart healthy recipes for bakers can be difficult. Try Sister Sharon’s hear healthy muffins for a new breakfast on the go!
Whole Wheat Muffins
2 cups whole wheat flour
¼ cup sugar or sugar substitute like stevia, Splenda
3 tsp baking powder
½ tsp salt
1 beaten egg
1 cup milk
¼ cup cooking oil
Stir flour, sugar, baking powder and salt together in a bowl. Make a well in the center.
Pour in egg, milk and oil in the well. Stir just to moisten. Fill greased muffin tins ¾ full. Bake in 400 degree F (200 C) oven for 20 – 25 minutes. Serve warm. Makes 12. I added chopped walnuts and can add raisins or blueberries
Sister Sharon entered the Sisters of Providence in 1984. Through her schooling she has gained passion and experience through working with agencies such as Adult Day Care, the Area Agency on Aging, and her time as the Director of Social Services at St. Josephs care center. She acquired a her Masters in Social Work with an emphasis in Gerontology before volunteering for the Washington State Chapter. Sister Sharon has volunteered her time and expertise to local efforts for over three years.
